My ALL TIME favorite thing to order at Panera. Well this and the Green Goddess salad, because the Green Goddess salad is the stuff dreams are made of. But back to this soup, because it deserves our full attention. I order this every single time I go to Panera if they have it available. And when they don’t have it available, I cry a little on the inside.

So I set out to make a copycat version and found that there a hundreds of copycat recipes out there. I fiddled with a few of them, added my own flair and the following recipe was born.

It’s good. Like Panera good. Yum.

Ingredients

Scale

2 tablespoons olive oil
5 garlic cloves, minced
1 large white or yellow onion, diced
2 {28 oz} cans of peeled tomatoes, undrained
1 cup chicken stock
1 tablespoon sugar
1/4 cup half and half
1 teaspoon of dried basil or 6 large fresh basil leaves, chopped
1/4 teaspoon dried oregano
Parmesan cheese to sprinkle on top
Salt and pepper to taste

Instructions

In a large dutch oven or heavy pot, saute garlic in olive oil over medium-high heat until fragrant {usually is less than a minute}. Add diced onion and cook for about 5 minutes, or until the onions are translucent.

Dump tomatoes and their juice, chicken stock, and sugar into the pot and stir. Simmer uncovered for 12-15 minutes or until soup has thickened. Stir in the half and half, basil, oregano, and salt and pepper. Cook for 2 more minutes.

Pour the soup into a blender {carefully as it will be super hot} and puree until smooth. Serve hot with croutons or a hunk of bread.

Note: This soup freezes very well. So if you’re into meal planning, go for it!

    Going to have to try this. Did your Panera Chicken & wild rice soup & it’s delicious, as good as the restaurants. I did add two boxes of rice though.

    Couldn’t resist making this tonight. It was great! I’ve made other tomato soups before but this tasted terrific with less work. This will be my new go-to tomato soup recipe.

    I used half the recommended 1 T. sugar and still finished with a little splash of rice vinegar. YMMV depending on the onion, tomatoes, and how you feel about Campbell’s. 🙂

    This is pretty close to the recipe I use to make my tomato soup. Instead of putting it in the blender, which I’m sure I’d spill, I use a stick blender in the pot. Works perfect on this and split pea soup too.

      4 GIANT bowls {about 2 cups each} or 8 smaller bowls {1 cups each}. I LOVE this soup! And it freezes well too if you have extra. 🙂

    Well, this soup must have zero calories! I copied and pasted the ingredients into an online recipe nutrition calculator and it stayed blank instead of making the computations. Does that mean we can eat as much as we wish?

    Mavis, this is delicious. I use crushed tomatoes and skip the blending. Very good, thank you. I make this for my husband, who doesn’t like tomato soup, except this one.
