What Is Crock Pot Beef Roast?

Crock pot beef roast is a main dish made by slow-cooking a chuck roast cut of beef in a slow cooker. The crock pot, which cooks on low and consistent heat, allows the meat to cook slowly over several hours, resulting in a fork-tender and succulent roast.

Ingredients For Easy Slow Cooked Beef Roast

Easy Crock Pot Beef Roast Recipe (3)
  • Beef Roast – I use a chuck roast.
  • Onion – red onion, yellow onion, or Vidalia are all good choices.
  • Beef Broth.
  • Roast Seasoning – Kosher Salt, Fresh Cracked Black Pepper, Garlic Salt (minced fresh garlic can be used,) Dried Thyme (fresh thyme can be substituted.)

What Is The Best Cut Of Beef For Pot Roast?

I recommend using a chuck roast for this recipe. This cut of meat tends to have a good amount of marbling and connective tissues, which break down during the long cooking process, resulting in a tender and flavorful roast. You can also use a bottom-round roast or brisket for pot roast.

Variations And Additions

While I think this is the best crock pot roast recipe, you can certainly get creative with the recipe. Here are a few ideas:

  • Add in a couple of tablespoons of Worcestershire sauce and a package of onion soup mix for a more intense flavor.
  • Yukon gold potatoes can be added for a classic meat and potatoes meal.
  • Substitute red wine for the beef broth.
  • Add dried rosemary, oregano, or Italian seasoning for additional flavoring.

Frequently Asked Questions With Answers

Do I have to brown the meat before putting it in the crock pot?

This recipe doesn’t require searing the meat before putting it into the slow cooker. There are some recipes like Crock Pot Chicken Thighs where searing helps render fat and seal in juices.

Can a frozen chuck roast be used in the crock pot?

Using frozen meat in the slow cooker is not recommended. Thaw the beef in the fridge before cooking in the crock pot to ensure even cooking and prevent food safety risks.

Why is my beef roast not tender?

If the beef is not tender, that means most likely that it has not cooked long enough. If at all possible, cook the roast on LOW so that it has time to get fall apart tender.

How do I store leftovers?

Store any leftovers in an airtight container in the fridge for up to 3 days.

Extremely comfortable cooking in the kitchen; rarely do I refer to recipes, until it’s a giant beautiful cut of red meat 😁 I found myself drawn to your recipe bcz I already knew how I wanted to make it but I really needed a bit of guidance on the best appropriate method in arranging ingredients inside crockpot…& your’s got straight to it which I value immensely ☺️ I’m positive you are talented in the beauty/flavors of cooking. I’ve got my meat atop the layers of multi onions drizzled w/ touch of 🫒 oil 👏 I’m excited simple seasonings were noted (they’re favs & I rarely keep it simple & savory) so thank u. I do wonder if I should add the fresh rosemary in sprigs or pulled leaves?! Anyways, this recipe is 🔥

I made this last night in the crock pot and it was delicious! I believe it benefitted from being a quality piece of meat from a 1/4 cow we purchased from a local purveyor.
I seasoned the night before and put all the sliced onions over it before refrigerating, assuming the flavors would penetrate the meat a little more. I lightly steamed some carrots and celery and added to them to the crock pot 2 hours before the 8-hour low-temp time frame was up. Used about half of the broth with corn starch for gravy, over the meat and mashed potatoes. Fed 6 people and the plates were cleaned of every delicious bite! Will make again when we get more beef.

I found the onions were too greasy to eat. I poured the stock into a defatter and made gravy adding a cornstarch slurry to thicken. Next time, I’ll add vegetables on top of the meat – carrots, celery, onion and small whole potatoes so it is a complete meal. Onions gave the broth a great flavor.

That could happen depending on the amount of fat in the roast. Sounds like you did a great job making the recipe your own! Way to go, Judy.

FAQs

Does a roast need liquid in crock pot? ›

Some recipes call for liquid, some do not. It mainly comes down to the type of meat you use. Cuts like chuck roast will release more fat and moisture than leaner cuts, so they don't need any water. In addition, the slow cooker itself creates some moisture, which helps keep the meat juicy.

How long does it take for a roast to get done in a crock pot? ›

Pat the roast dry and rub with seasoning, then with flour. Sear in a skillet for 2-3 minutes per side. Combine gravy ingredients and add them to the Crock Pot along with the roast, potatoes, and carrots. Cook on low for 8-10 hours or on high for 5-6.

Do you have to brown a roast before putting in crock pot? ›

1. Browning Is Better. Slow cooker recipes don't always instruct you to brown meat before adding it to the pot, but there are some advantages to doing so. If you sear meat to a crusty brown with a little oil in a hot skillet, the meat develops more complex flavors and improves the dish.

Is it better to cook a roast in a crock pot on high or low? ›

PRO TIP: It's better to cook pot roast on the low setting rather than the high setting when it comes to pot roast. Your meat will be tender and delicious every time.

What is the best liquid for pot roast? ›

A cup or so of beef stock is tasty; good red wine is delicious with beef; plain water is okay too. If you add sliced carrots and onions, you'll have a flavour base for delicious gravy when the roast is done.

Do you put vegetables on top or bottom of roast? ›

Using tongs, sear meat on all sides until browned and place on top of vegetables in the crockpot. Add whole garlic cloves into the crevices of the roast (on the top and bottom usually where there is a seam of fat).

When should I add potatoes to pot roast? ›

Place the roast on top of the onions and season with the salt and pepper. Add 1/4 cup of the broth or water and bring to a simmer. Cover and simmer on low for 2 hours. Add the potatoes, carrots, and quartered onions and cover and slowly simmer for 1 hour longer.

When should I add my potatoes to crock pot roast? ›

If you'd prefer to add small diced potatoes and carrots, add them during the last 2-3 hours of cooking (to prevent mushy vegetables). The size and shape of your roast and make and model of slow cooker (older models cook slower) can affect the cooking time of your roast.

Should meat or vegetables go in crockpot first? ›

Fill the crock pot at least half full and no more than two-thirds full. Thaw frozen meats and vegetables before placing in the crock pot. Place dense vegetables in crock pot first, such as carrots and potatoes, since they take longer than meats to cook.

Why do you put flour on a roast? ›

Liberally seasoning your meat is a must. Place your meat in a zip top bag with flour, salt and pepper and shake to coat. The flour will create a crust on the top of the meat when you sear it and thicken the juices for a nice gravy-like consistency.

What to season your roast with? ›

A basic roast beef rub can include a combination of the following ingredients:
  1. Salt.
  2. Pepper (freshly cracked is best)
  3. Garlic powder or minced garlic.
  4. Onion powder.
  5. Dried herbs like thyme, rosemary, and oregano.
  6. Olive oil or melted butter for basting.

Do potatoes go on top or bottom of roast? ›

Put potatoes, carrots and onion on bottom of crockpot. Place the roast on top, fat side up. Pour in water or beef broth. Sprinkle chives, parsley, pepper and Onion Soup mix over the meat.

Is 4 hours on high the same as 8 hours on low? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Why is my pot roast still tough in the crock pot? ›

Why is my pot roast still tough? It's because you haven't let the collagen break down. Extend the cook time, make sure there's enough liquid and keep an eye on the dish.

How much water should I put in a Crock-Pot with a roast? ›

The amount of water you should put in a Crock Pot for pot roast can vary depending on your personal preference, the size of your roast, and any additional ingredients you're using. Generally, you'll want to add enough liquid to cover the bottom of the Crock Pot and come about halfway up the sides of the roast.

Will a roast dry out in a Crock-Pot? ›

To keep a pot roast from drying out, your slow cooker needs liquid to create a moist environment, and that can include meat or vegetable stock, wine or water. This doesn't mean the meat should be submerged; a cup or two of liquid will be enough, since the cooker is covered and liquids stay trapped inside.

Can you cook meat in Crock-Pot without liquid? ›

Water or liquid is necessary to create steam. When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full.

How much liquid do you put in a Crock-Pot for a pot roast? ›

Place roast on top of vegetables. Place 3 bouillon cubes randomly on top of the roast and pour in 1/2 cup water. Cover and cook on Low for 6 to 8 hours or on High for 4 to 5 hours. An instant-read thermometer inserted in the thickest part of the roast should read 145 degrees F (65 degrees C).
